Even if we know GRRM already said he won't be adding new POVs (except for prologues/epilogues), let's dream a bit. Whose POV would you have liked to read? All characters included, alive/dead/undead.
Just Edd and Mance. Tormund could be really funny though.

I'd kill for a dolorous edd pov. It'd be epic!
A mance one would be good too. I approove!
Gotta muse on this to see if there's anybody else i'd like to see here. hmmm.... later.

I think an Osha POV is desperately needed now. "I'm going to die????"
how can I forget about her??? HOW.

I was *so* sure there would be a Benjen POV in ACoK. Now (in TWOW) would have been a great time for it, same with the Blackfish. Another POV I would have loved is Jojen, before he got served for dinner.
But no matter what GRRM says, we'll definitely get a Dolorous Edd POV, once he's left all alone to rebuild the Nights Watch, him being Azor Ahai and everything.
Hah, I just realized none of the pretenders for the throne had a POV...except Dany. Don't go there GRRM, don't you bloody dare!
A Dolorous Edd POV would never work, cause GRRM would be so depressed after writing that chapter he'd commit suicide. I would have loved a Robb POV! Also a Randyll Tarly one. Margeary Tyrrel and last but not least the High Septon in AFFC.

Isn't Maege Mormont (and who else...Glover?) supposed to be out there looking for Greywater Watch? I do wonder how and where he will show up. Wouldn't it be wonderful is he was somewhere in sight this whole time?
Hah! A la Varys, you mean? I was thinking about this earlier, realistically I'm not sure it's possible for us to see Greywater Watch, smply because there are no POV characters in the vicinity, not as of ADwD. Maybe TWoW will change that, but somehow I doubt GRRM will ruin the mystery of that place with a description. My guess is that Howland will appear somewhere else. Stannis' camp, perhaps?...neah, might be too early. I think GRRM will drag this as much as he can. Or just come up with Howland and kill him in the next chapter, before he says anything too revelatory.
If Howland dies, the truth dies with him. GRRM wouldn't dare...or would he?
Not necessarily. Howland was there, true, but Bran could see it in one of his 'time travels', for example. We can also assume that Benjen knows something too, since GRRM declined at one point to answer why did Benjen join the NW and said that will learn about that later on. I'd even say they hinted at it in S1 as well.
There is a theory that Benjen is waaay up north in The Land of Always Winter. GRRM could save him for a prologue/epilogue chapter but I doubt it. The reveal of his fate has to be linked to a much more bigger moment. My money is on Jon meeting him again. Another choice would be Bran, but I don't find it likely, since it's Benjen and Jon who had a much closer relationship.
Howland Reed ... Wut? I wanna know what went down !
Absolutely! Give it up, Ser Reed!

A Jaqen POV would have been great during the time he was interacting with Arya, would have been cool to know his take on things overall. Also, where is he going now etc....
Would LOVE to see Howland Reed's take on the TOJ etc.
And Ghost, want to know what Ghostie thinks. And Summer.
You know, I just read the other day that, when asked what POVs he's planning to introduce (this was about ASoS-time) GRRM mentioned Cersei, Yara and near the end of the series...Shireen! Now I know he reconsidered and said there will be no more POVs, but goddammit!

This is confirmation for me that Shireen will inherit the Iron Throne and
Spoiler
Tyrion will help her get there somehow because he is immune to greyscale and the two of them will survive the coming greyscale apocalypse that Jon Connington will deliver to Westeros. And that bitch Val is just WRONG about Shireen.

I would have loved a Littlefinger POV! Positively thrilled if that had happened. As it is GRRM will never write one for him. When asked he said Littlefinger "knows too much". Which of course made me wonder what other things does that bastard knows.
I agree with YvyB regarding Howland Reed. That would make for a very interesting POV!
Al, that could only happen if Howland becomes an Prologue POV or if Bran sees it in the Prologue throught weirwood warging or Bloodraven. And I would hate all of the above options because we know how Prologue POVs end up!

Actually that's a good point, Bran probably will be the key to a lot of secrets unfolding.
Al, don't kill my hopes of ToJ reveal through Howland Reed, man! I still expect Martin to write something, ANYTHING about his whereabouts. I thought with Meera and Jojen beyond the Wall we'll never get it but maybe they return home one day.

Greywater Watch is too fascinating a keep not to visit. It floats on a swamp for goodness sake
Quaithe. I always wanted more Essos POVs that did not necessarily focus on Daenerys but on other events occuring there. There's still a missing link to be found with the Asshai side, and I always thought that her method seems much different from Melisandre even though they are supposedly from the same background. I want to see the ruins of Valyria, or at least something to compensate for the constant reminder of the "no one ever goes there and the people that do disappear" motif.
Also I'm a huge fan of the ADWD prologue done by Varamyr Sixskins. It was the first time I felt that desperation of what's to come in the series.
