Meh, doesn't matter. But yes, I concur with Jentario about Mel wanting Jon to create another shadowbaby to avoid squandering resources on the Boltons. But if that is the goal, she shouldn't have wasted Mance. She could have raped him, if need be, to get what she needed.
From what was shown on the show, he was a king just as much as Stannis is. The fact that it's a different geographic area than the traditional 7 kingdoms shouldn't make a difference.

This entirely my own speculation, not gleamed from the books or anything. But it seems the shadowdemons gain their appearance by the *donor* but it also targets the donors enemies. A shadow demon dervived from Mance would hunt down Mance's enemies (probably Stannis himself), that's probably why he would not be a good candidate. Jon on the other hand hates the Boltons and his shadowdemon would track down the correct targets.
It seems while Melly can birth the Demonbaby, she can't really control it. I guess they are "fire and forget" weapons. ;)

IIRC, there's a scene in the books after the first shadow baby where Stannis recals having a dream of killing his brother in the same night that Mel released the shadow baby. Which would mean Stannis's dream state/subconscious had some control over it.
