Anyway: I see reasonable doubt that the Umber is not on the level about his desire to ally himself with the Boltons: he refused to swear an oath, the house was always loyal to the Starks and the Bolton's betrayed their King in the North. True he gave up Rickon and killed Shaggy (if he really was the one to do it) but if he really wanted an in in Winterfell, that was necessary to get Ramsay to trust him.
For the Hound, we technically only suspect he's a devout and pious if he survived. I always assumed he's on that island as a quiet retreat and a hiding place rather than devotion to the Faith. It's not like I believe he's turned into Lancel 2.0. I don't know. We will see.
